Coconut Cacao Monkey Balls

Oh, will you LOVE these. These monkey balls will knock your socks right off. They are a great high energy, high protein, low sugar, healthy treat.
I personally make these coconut cacao monkey balls to enjoy on the trail, between yoga classes or for a nice sweet treat after a good meal. They pack great.
Now, all good things can be over done. These whole food energy balls should be enjoyed in moderation, which can be difficult because of how tasty they are. A great tip is to freeze them (they freeze well) or individually package them for your week.

 

Coconut Cacao Monkey Balls

Ingredients: 
3 tablespoons raw cacao (nibs or powder)
2 tablespoons almond milk
1.5 cups shaved coconut
5 dates (option to soak for around 20 minutes)
4 tablespoons almond butter
Pinch of salt
Around 1 cup hemp seeds for rolling
Directions: 
Take all ingredients and add to a high powered blender. Depending on the power of your blender, you may need to stop it a couple times and mix up the ingredients with a spoon. Be mindful not to over run the motor on your blender. When finished mixture should be the consistency of brownie mix. Take mixture and form into balls around 2 inches wide. Place hemp seeds on a plate and roll balls in seeds covering the outside. Place monkey balls in fridge to settle for around 2-3 hours. Don’t hesitate to freeze some, these balls are super tasty and can be tempting to over indulge on.
